For the Chicken Stuffed Sweet Potato
3-4 chicken thighs, 2 sweet potatoes, chicken broth, BBQ spice mix, BBQ sauce, salt,pepper
Wash and poke hole in the sweet potatoes. Cook the sweet potatoes in the microwave for 6-8 minutes depending on size. Poach chicken in chicken broth and 1/4 C of the BBQ seasoning, salt, pepper to taste. DO NOT BOIL! Once chicken is cooked 15-20 minutes remove from broth and shred.* Mix in BBQ sauce and salt and pepper to taste. Slice sweet potato in half and put chicken inside, top with pico.
*using a handmixer can be helpful to shred chicken, unless you are desireé LOL
For the Pico De Gallo
3 plum tomatoes, small diced, 1/4 red onion,small diced,1/4 bunch cilantro, small diced, FRESH lime juice, jalapeno small diced salt, pepper
Combine everything in non reactive bowl. Season with lime juice and salt and pepper to taste.
