1 lb Fish, Whiting, Catfish, etc
1 C Cornmeal
1/2 C Flour
1 t Garlic Powder
1 t Paprika
1/2 t Oregano
Lemon
Milk
1. Cut fish into 1 inch pieces.
2. Season with garlic powder, oregano, salt, and paprika. Add lemon zest if desired. Cover with milk.
3. Let sit at least 30 minutes at room temperature up to overnight in fridge.
4. Begin to heat about 1 inch of oil in a skillet. Combine cornmeal, flour, and salt.
5. Dredge fish in flour mixture and fry in oil for 2-3 minutes on each side. Season once again with salt once out of oil.
6. Drain on paper towel or baking rack.
